Instructions
- Boil chicken in enough salted water to make 4 cups stock. Remove meat from bones and cut into bite-size pieces.
- Reserve stock.
- Chop cabbage and stir-fry in small amount of oil until tender.
- Cook rice in chicken stock until done.
- Saute pepper and green onions until tender.
- Mix all ingredients.
- Add mushrooms. Add egg.
- Simmer 30 minutes.
- Season with soy sauce.
- Serves 12 easily.
