Ingredients

  • 4 large chicken breasts or 1 whole chicken
  • 1 small cabbage
  • 2 c. rice (uncooked)
  • 1 egg, well beaten
  • 1 can mushrooms
  • 1 chopped bell pepper
  • 1 c. chopped green onion

Instructions

  1. Boil chicken in enough salted water to make 4 cups stock. Remove meat from bones and cut into bite-size pieces.
  2. Reserve stock.
  3. Chop cabbage and stir-fry in small amount of oil until tender.
  4. Cook rice in chicken stock until done.
  5. Saute pepper and green onions until tender.
  6. Mix all ingredients.
  7. Add mushrooms. Add egg.
  8. Simmer 30 minutes.
  9. Season with soy sauce.
  10. Serves 12 easily.
