Krumkaka are delicate Norwegian waffle cookies with a crisp texture and subtle cardamom flavor, perfect for festive occasions or as an elegant treat with coffee.

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 1/4 teaspoon ground cardamom
  • 1 1/3 cups sifted flour
  • 1/4 teaspoon salt
  • 1 cup heavy cream

Instructions

  1. Beat eggs until light.
  2. Gradually add sugar, beating until thick and lemon colored.
  3. Stir in ground cardamom.
  4. Sift flour and salt together.
  5. Blend the flour mixture into the egg mixture alternately with heavy cream.
  6. Place 1 tablespoon of batter a little off center on the krumkaka iron.
  7. Close the lid and cook a few minutes, turning the pan once to brown both sides.
  8. Remove from the iron with a spatula and immediately roll into a cone shape.
