Ingredients

  • 8 chicken wings
  • 2 Tbsp. sugar
  • 2 tsp. cornstarch
  • 1/4 c. water
  • 1/4 c. soy sauce
  • 2 Tbsp. lemon juice
  • 1/4 tsp. crushed red pepper flakes
  • 1 Tbsp. vegetable oil
  • 1 small red sweet pepper
  • 1/2 c. diced onion
  • 1 to 2 garlic cloves
  • 1/3 c. peanuts
  • hot cooked rice

Instructions

  1. Cut the chicken wings into 3 sections and discard the wing tip section. Set the wings aside.
  2. In a bowl, combine sugar, cornstarch, water, soy sauce, lemon juice, and crushed red pepper flakes to make the sauce.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the diced red pepper, diced onion, and minced garlic to the skillet and sauté until fragrant and vegetables are tender.
  5. Add the chicken wings to the skillet and cook until they are browned and cooked through, about 10 minutes.
  6. Pour the prepared sauce over the wings and vegetables, stirring to coat evenly.
  7. Add the peanuts and cook for another 2-3 minutes until the sauce thickens slightly.
  8. Serve hot over cooked rice.
