Kyle'S Mexican Cornbread

Ingredients

  • 1 lb. hamburger
  • 1 chopped onion
  • green or hot pepper
  • 1/2 lb. grated Cheddar cheese
  • 1 c. corn meal
  • 1 c. milk
  • 3/4 tsp. salt
  • 1 can creamed corn
  • 1/2 c. Crisco oil
  • 2 eggs, beaten
  • 1/2 tsp. soda

Instructions

  1. Brown hamburger, onion and pepper.
  2. Mix corn meal, milk, salt, creamed corn, Crisco oil, eggs and soda.
  3. Pour corn meal mixture in iron skillet.
  4. Add hamburger mixture.
  5. Pour 1/2 corn meal mixture on top with Cheddar cheese.
  6. Bake at 350° for 45 to 60 minutes.
