Ingredients

  • 2 to 3 lb. boneless lamb
  • flour
  • salt and pepper
  • 1/4 cup carrots, chopped fine
  • 2 tablespoons onions, chopped fine
  • 2 tablespoons parsley, chopped fine
  • 2 tablespoons drippings

Instructions

  1. Cut the lamb into uniform pieces and roll in seasoned flour.
  2. Brown the floured lamb in drippings.
  3. Place the browned lamb in a casserole dish.
  4. Add chopped carrots, onions, and parsley to the casserole.
  5. Cover with cold water.
  6. Cook in a moderate oven until the meat is tender, about 1 1/2 hours at 350°F.
  7. Add more seasonings if necessary.
  8. Thicken the gravy with flour before serving.
