Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine sugar, brown sugar, and shortening until creamy.
- Add the egg and vanilla, and beat well.
- In a separate bowl, whisk together flour, soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until well combined.
- If doubling the recipe, use 1/2 cup shortening and 1/2 cup butter as noted.
- Roll out the dough on a floured surface to about 1/4 inch thickness.
- Cut into desired shapes and place on a baking sheet.
- Bake for 8-10 minutes or until edges are lightly golden.
- Cool on wire racks before serving.
