Ingredients

  • 1 tsp canola oil
  • 1 medium onion, chopped
  • 1 can Italian tomatoes with liquid
  • 2 tsp sugar
  • 6 oz tomato paste
  • salt and pepper to taste
  • 3/4 cup water
  • 1/2 package lasagna noodles
  • 1 pound low-fat ricotta cheese
  • 1 package frozen spinach, cooked and drained
  • pepper
  • 2 tbsp Parmesan cheese

Instructions

  1. Cook lasagna noodles, drain and cool.
  2. Mix low-fat ricotta cheese, cooked and drained spinach, pepper, and Parmesan cheese.
  3. Spray a casserole dish with cooking spray (Pam).
  4. Spread the spinach mixture onto each cooled lasagna noodle, then roll up and cut in half.
  5. Arrange the rolled noodles with ruffled edges up in the dish.
  6. Pour the tomato sauce over the noodles.
  7. Bake uncovered for 35 minutes at 350°F.
