Ingredients

  • 2 lb. shredded cabbage
  • 2 small sliced zucchini
  • 1/3 c. olive oil
  • 15 oz. tomato sauce
  • 6 oz. tomato paste
  • 1/2 c. water
  • 1/2 tsp. dried basil
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 chopped tomatoes
  • 16 oz. Ricotta cheese
  • 4 c. grated Jack cheese
  • 2 beaten eggs
  • 12 lasagne noodles

Instructions

  1. Core, trim and shred cabbage.
  2. Trim and thinly slice squash. In a large skillet, saute cabbage for 10 minutes in hot oil.
  3. Add squash and cook an additional 10 minutes until vegetables are tender.
