Ingredients

  • 2 c. grated potatoes
  • 2 eggs
  • 1 tsp. salt
  • 1 heaping Tbsp. flour or matzo meal
  • pinch of baking powder
  • 1 small onion

Instructions

  1. Combine grated potatoes, beaten eggs, salt, grated onion, flour or matzo meal, and a pinch of baking powder in a bowl.
  2. Mix well until all ingredients are evenly incorporated.
  3. Drop the mixture by tablespoonfuls onto a hot, greased skillet.
  4. Fry on both sides until golden brown and crispy.
  5. Serve hot with sour cream or applesauce.
