Lava Cakes For Two

Ingredients

  • 2 ounces, weight Semi-sweet Baking Chocolate
  • 4 Tablespoons Butter
  • 1 Tablespoon Peanut Butter
  • 1/2 cups Powdered Sugar
  • 1 Whole Egg
  • 1 Egg Yolk
  • 3 Tablespoons Flour

Instructions

  1. In a microwave-safe bowl, melt chocolate and butter (about 1 minute on high). Add peanut butter and whisk until everything is smooth. Mixture may need to be heated for additional time as needed, 10-15 seconds at a time.
  2. Add powdered sugar, egg, egg yolk, flour, and vanilla. Stir until combined.
  3. Grease small baking dishes or ramekins and divide batter evenly between the dishes. Bake at 425°F for 13-15 minutes or until outside edge is firm but center is slightly soft.
  4. Remove from oven and let stand a couple minutes before turning out onto a small plate. Top with powdered sugar, ice cream, caramel or chocolate sauce, and/or pecans. Serve warm.
