Ingredients

  • 1 c. flour
  • 1 1/2 tsp. sugar
  • 1/8 tsp. baking soda
  • 1/8 tsp. salt
  • 2 Tbsp. butter, softened
  • 6 Tbsp. buttermilk
  • 1 egg white, lightly beaten
  • 1 Tbsp. sesame seed, toasted or 1 Tbsp. caraway seed
  • 6 oz. Havarti cheese, shredded

Instructions

  1. Preheat oven to 450° with lowest rack 6 inches from the bottom, the next rack 6 inches above it.
  2. Combine flour, sugar, soda and salt.
  3. Cut in butter with a pastry blender until crumbly.
  4. Add buttermilk, one tablespoon at a time, tossing dough with a fork to mix.
  5. Once dough holds together, knead lightly on a floured surface.
  6. Divide dough in half.
  7. On floured waxed paper, carefully roll out each half into a 10-inch circle.
  8. Invert onto a greased cookie sheet and remove paper.
  9. Brush with egg white and sprinkle with seeds.
  10. Bake 10 to 12 minutes, rotating cookie sheets between racks to assure even browning.
  11. Cool on wire racks.
  12. Just before serving, divide cheese between crackers and place in a warm oven until cheese melts.
  13. Cut into wedges to serve.
