Ingredients

  • 3/4 cup sugar
  • 1 large head cabbage, finely chopped
  • 1 large bell pepper, sliced
  • 1 large purple onion, sliced
  • chopped celery (optional)
  • 1 cup vinegar
  • 1 teaspoon salt
  • 1 cup Wesson oil
  • 1 teaspoon celery seed

Instructions

  1. Place cabbage, bell pepper, onion, and optional celery in alternate layers in a large bowl.
  2. Cover the layers with sugar.
  3. In a separate bowl, combine vinegar, salt, oil, and celery seed to make the pickling brine.
  4. Pour the brine over the layered vegetables, ensuring they are fully covered.
  5. Cover and refrigerate for at least 24 hours before serving to allow flavors to meld.
