Leek And Bacon Chowder

Ingredients

  • 2 leeks, washed and thinly sliced
  • 1 onion, chopped
  • 2 potatoes, peeled and cubed
  • 6 slices Canadian bacon, chopped (or regular bacon, chopped and cooked)
  • 3 Tbsp. butter
  • 1/3 c. flour
  • 4 to 5 c. chicken broth
  • 1 c. cream or milk
  • salt and pepper

Instructions

  1. Combine leeks, onion and bacon in large saucepan and saute in butter for about 5 to 6 minutes.
  2. Add potatoes.
  3. Stir to combine, then add flour.
  4. Gradually stir in broth until smooth.
  5. Bring to a boil and simmer for about 15 minutes.
  6. Add cream or milk and cook until potatoes and leeks are soft.
  7. Serves 4 to 6.
