Ingredients

  • 8 medium leeks
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1/2 tsp. dry mustard
  • 1/2 tsp. salt
  • 1 c. milk
  • 1 c. shredded Cheddar cheese
  • 1 c. fresh bread crumbs

Instructions

  1. Cook the leeks; place them in a baking dish.
  2. In a 1-quart saucepan over low heat, melt the butter.
  3. Stir in the flour, dry mustard, and salt until smooth.
  4. Gradually stir in the milk; cook, stirring until thickened.
  5. Stir in the shredded Cheddar cheese until melted.
  6. Pour the cheese mixture over the cooked leeks.
  7. Sprinkle the bread crumbs over the top.
  8. Broil until the crumbs are browned and crispy.
