Ingredients

  • 9-inch baked pastry shell
  • 6 Tbsp butter
  • 1/3 cup lemon juice
  • 1/8 teaspoon salt
  • 1 cup sugar
  • lemon rind (optional)
  • 1 egg
  • 3 eggs, separated
  • 1 quart vanilla ice cream
  • 1/4 teaspoon cream of tartar

Instructions

  1. Melt butter in a saucepan and add lemon juice, salt, and sugar.
  2. Beat egg yolks with the egg and add to the butter mixture.
  3. Cook the mixture until thick, then cool.
  4. Spread 1 pint of vanilla ice cream in the baked pastry shell and freeze.
  5. Pour half of the lemon sauce over the ice cream layer.
  6. Freeze until firm, then add another layer of ice cream and lemon sauce and freeze again.
  7. Beat egg whites with cream of tartar until soft peaks form.
  8. Gradually add sugar and continue beating until stiff peaks form.
  9. Spread the meringue over the frozen dessert and bake in a very hot oven until browned.
  10. Freeze until ready to serve. Will keep well for a couple of weeks in the freezer.
