Ingredients

  • 1 1/2 cups sugar
  • 1/4 cup fresh grated lemon peel
  • 1 cup oil
  • 6 eggs
  • 1 2/3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 325°F and grease and lightly flour two 8 x 4-inch loaf pans.
  2. In a large bowl, blend sugar, grated lemon peel, and oil; beat for 1 minute at medium speed.
  3. Add eggs one at a time, beating well after each addition.
  4. Stir in the all-purpose flour, baking powder, and salt just until the dry ingredients are moistened.
  5. Pour the batter into the prepared pans.
  6. Bake at 325°F for 50 to 65 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool the loaves for 10 minutes, then remove from pans.
  8. If desired, glaze with lemon glaze before serving.
