Ingredients

  • 6 Tbsp. butter
  • 1 c. sugar
  • 2 eggs
  • 1 1/2 c. flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. milk
  • 3 Tbsp. lemon juice

Instructions

  1. Cream butter with 1 cup sugar.
  2. Add eggs and beat until well combined.
  3. Sift dry ingredients together (flour, baking powder, salt).
  4. Alternately add the dry ingredients and milk to the creamed mixture, beating after each addition.
  5. Stir in the 3 tablespoons lemon juice and beat until smooth.
  6. Pour the batter into a greased baking pan.
  7. Bake at 350°F (175°C) for about 30 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before cutting into squares.
