Saffron Rice With Almonds

Ingredients
- 1 cup unsalted butter ⓘ
- 3/4 cup slivered blanched almonds
- 1 1/4 cup chopped celery ⓘ
- 1 1/4 cup chopped onions
- 2 cups raw long-grain white rice ⓘ
- 2 3/4 cups homemade chicken stock or canned broth ⓘ
- 2 1/2 teaspoons salt ⓘ
- 1/4 teaspoon freshly ground pepper ⓘ
- generous pinch saffron
- 1/3 cup golden raisins ⓘ
Instructions
- Melt 2 tablespoons of butter in a medium skillet over medium heat.
- When hot, sauté celery and onions until lightly coated with butter, about 4 to 5 minutes.
- Add the rice and cook, stirring constantly, for 1 minute.
- Add the chicken stock, salt, pepper, and saffron.
- Stir in the raisins and almonds.
- Transfer the mixture to a buttered casserole dish, cover, and bake at 350°F until all liquid is absorbed, approximately 45 minutes to 1 hour.
- This dish can be kept warm in a 250°F oven for 30 to 40 minutes before serving.
