Saffron Rice With Almonds

Ingredients

  • 1 cup unsalted butter
  • 3/4 cup slivered blanched almonds
  • 1 1/4 cup chopped celery
  • 1 1/4 cup chopped onions
  • 2 cups raw long-grain white rice
  • 2 3/4 cups homemade chicken stock or canned broth
  • 2 1/2 teaspoons salt
  • 1/4 teaspoon freshly ground pepper
  • generous pinch saffron
  • 1/3 cup golden raisins

Instructions

  1. Melt 2 tablespoons of butter in a medium skillet over medium heat.
  2. When hot, sauté celery and onions until lightly coated with butter, about 4 to 5 minutes.
  3. Add the rice and cook, stirring constantly, for 1 minute.
  4. Add the chicken stock, salt, pepper, and saffron.
  5. Stir in the raisins and almonds.
  6. Transfer the mixture to a buttered casserole dish, cover, and bake at 350°F until all liquid is absorbed, approximately 45 minutes to 1 hour.
  7. This dish can be kept warm in a 250°F oven for 30 to 40 minutes before serving.
