- Mix the yellow cake mix with pudding and lemon Jell-O in a large bowl.
- Add oil, water, lemon extract, and grated lemon peel to the dry ingredients.
- Beat at low speed on mixer until combined.
- Pour the batter into the prepared loaf pans.
- Bake for 30 to 45 minutes or until a cake tester inserted into the center comes out clean.
- Allow to cool slightly before removing from pans.
