Ingredients

  • 1 package yellow cake mix with pudding
  • 1 package lemon Jell-O
  • 3/4 cup oil
  • 3/4 cup water
  • 1 teaspoon lemon extract
  • 1 1/2 teaspoons grated lemon peel
  • 1 cup pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8x4-inch loaf pans.
  2. Mix the yellow cake mix with pudding and lemon Jell-O in a large bowl.
  3. Add oil, water, lemon extract, and grated lemon peel to the dry ingredients.
  4. Beat at low speed on mixer until combined.
  5. Pour the batter into the prepared loaf pans.
  6. Bake for 30 to 45 minutes or until a cake tester inserted into the center comes out clean.
  7. Allow to cool slightly before removing from pans.
