Ingredients

  • 8 soft-shell crabs, cleaned
  • salt to taste
  • 1/2 cup saltine cracker crumbs, fine consistency
  • 1 tablespoon all purpose flour
  • 1 egg, slightly beaten
  • 1/2 cup milk
  • 3/4 cup salad oil

Instructions

  1. Sprinkle the soft-shell crabs with salt.
  2. Roll the crabs in a mixture of finely crushed saltine cracker crumbs and flour.
  3. Dip the crabs in a mixture of slightly beaten egg and milk.
  4. Roll the crabs again in the crumbs and flour mixture.
  5. Heat salad oil in a skillet over medium heat.
  6. Fry the crabs in hot oil for 3 to 5 minutes on each side, until golden brown.
  7. Drain the crabs on paper towels.
  8. Serve with lemon wedges.
