Ingredients

  • 1/2 lb. unsalted softened butter
  • 1/2 cup granulated sugar
  • 1 1/2 Tbsp. fresh grated lemon zest
  • 1 tsp. vanilla
  • 1/2 tsp. lemon extract
  • 2 cups flour
  • 1/4 tsp. salt
  • 1 cup sweetened flaked coconut, toasted and cooled
  • confectioners sugar

Instructions

  1. Cream the butter with the granulated sugar until light and fluffy; beat in lemon zest, vanilla, and lemon extract.
  2. Add flour and salt; beat mixture until it forms a dough.
  3. Add toasted coconut and mix well.
  4. Chill the dough for 1 hour.
  5. Divide the chilled dough in half on a sheet of wax paper and shape each half into an 8-inch log.
  6. Chill the logs for 4 hours or overnight.
