Ingredients

  • 3 Tbsp. margarine
  • 1/8 tsp. salt
  • 3/4 c. sugar
  • 2 Tbsp. flour
  • 2 egg yolks
  • 1 c. milk
  • juice and grated rind of 1 lemon
  • 2 egg whites

Instructions

  1. Combine margarine, salt, sugar, and flour and mix well.
  2. Add egg yolks, milk, lemon juice, and grated lemon rind; beat with a rotary egg beater until smooth.
  3. Fold in beaten egg whites gently.
  4. Pour the mixture into a greased baking dish.
  5. Set the dish in a pan of water for baking.
  6. Bake at 350°F (175°C) for about 45 minutes or until set.
