Ingredients

  • 1 lb. butter
  • 2 1/4 cups sugar
  • 6 egg yolks
  • flour
  • 1 lb. cut candied cherries
  • 1 quart broken pecans
  • 2 oz. lemon extract
  • 6 egg whites
  • 1 tsp. baking powder
  • 1 lb. cut pineapple

Instructions

  1. Cream the butter and add sugar; continue creaming.
  2. Add well-beaten egg yolks to the mixture.
  3. Dredge in flour the broken pecans, candied cherries, and pineapple; then fold into the batter.
  4. Add lemon extract to the mixture.
  5. Sift 4 1/2 cups of flour with the baking powder and add to the batter.
  6. Gently fold in the well-beaten egg whites.
  7. Mix thoroughly until smooth.
  8. Pour the batter into a well-greased and floured large angel cake pan.
  9. Bake in a 250°F (120°C) oven for 5 hours, placing a pan of hot water above and below the cake pan.
