Ingredients

  • 1 envelope unflavored gelatin
  • 1/4 cup water
  • 1/4 cup sugar
  • 1 tablespoon sugar
  • 8 ounces soft Neufchatel cheese
  • 1/3 cup instant nonfat dry milk powder
  • 1 cup unsweetened orange juice
  • 1/3 cup water

Instructions

  1. Sprinkle gelatin over 1/4 cup water in a small saucepan and let stand for 1 minute.
  2. Add 3 tablespoons sugar to the gelatin and cook over medium heat until dissolved, stirring constantly.
  3. Remove from heat and allow to cool.
  4. In a mixing bowl, combine soft Neufchatel cheese, 1/4 cup sugar, and instant nonfat dry milk powder until smooth.
  5. Gradually add unsweetened orange juice and 1/3 cup water, mixing well.
  6. Stir in the cooled gelatin mixture.
  7. Pour into serving glasses or bowls and refrigerate until set, about 2-3 hours.
