Lemon Dill Rotini

Ingredients

  • 1/2 Lemon; juice of
  • 1/4 c Crumbled feta cheese
  • 1/4 c Black olives
  • 1/2 c Fresh dill; chopped
  • 1 T Capers; drained
  • 12 oz Rotini pasta
  • 4 Scallions; sliced
  • 2 t olive oil
  • 4 oz Mushrooms; thinly sliced
  • Black pepper

Instructions

  1. 1. In a large pot of boiling water, cook rotini according to package instructions; drain well.
  2. 2. In a large bowl, whisk together oil and lemon juice.
  3. 3. Add cooked pasta and toss to coat.
  4. 4. Add remaining ingredients and toss gently to combine. Season to taste with black pepper.
  5. 5. Serve immediately or chilled.
