Ingredients

  • 3 egg yolks
  • 1/4 cup lemon juice
  • 1/2 teaspoon grated lemon rind
  • 1/3 teaspoon salt
  • 3 egg whites
  • 1/2 pint whipping cream
  • 3/4 cup graham cracker crumbs
  • 1/2 cup sugar

Instructions

  1. Mix sugar, egg yolks, lemon juice, lemon rind, and salt in a saucepan. Cook over medium heat until sugar melts and mixture slightly thickens.
  2. Cool the lemon mixture.
  3. Fold in whipped cream and stiffly beaten egg whites.
  4. Line a pan with most of the graham cracker crumbs.
  5. Pour the lemon mixture into the pan and sprinkle remaining crumbs on top.
  6. Freeze at the coldest temperature until firm.
