Egg-Stra Special Breakfast combines crispy hash browns, savory sausage, and cheesy eggs for a hearty, flavorful meal perfect for weekend brunch or family gatherings.

Ingredients

  • 1.5 to 2 lb. frozen hash browns, thawed
  • 2 lb. bulk sausage
  • 1 medium onion
  • 5 eggs
  • 1 tsp. salt
  • dash of nutmeg
  • 1 Tbsp. parsley flakes
  • 13 oz. can evaporated milk
  • 1/4 to 1/2 lb. shredded Cheddar cheese

Instructions

  1. Pat the thawed hash browns into a greased 9 x 13-inch pan.
  2. Bake the hash browns at 350°F for 10 minutes.
  3. Meanwhile, brown the sausage with chopped onion.
  4. Spread the cooked sausage and onion over the partially baked hash browns.
  5. In a bowl, beat the eggs with evaporated milk, salt, nutmeg, and parsley.
  6. Pour the egg mixture evenly over the sausage and hash browns.
  7. Sprinkle shredded cheese on top.
  8. Bake at 350°F for an additional 30 minutes until set and golden.
