Ingredients

  • 10 oz. jar large pimento-stuffed green olives
  • 3 fresh oregano sprigs
  • 3 large garlic cloves
  • 2 lemon wedges
  • 10 whole black peppercorns
  • 3 Tbsp. fresh lemon juice

Instructions

  1. Drain olives, reserving the brine.
  2. Rinse olives and drain well.
  3. Layer olives, oregano sprigs, garlic, lemon wedges, and peppercorns in a jar.
  4. Add lemon juice to the jar.
  5. Fill the jar with enough reserved brine to cover the ingredients.
  6. Place the lid on the jar and shake well.
  7. Let the olives marinate in the refrigerator for at least 1 week before serving.
