Ingredients

  • 3 cups packaged biscuit mix
  • 1/2 cup sugar
  • 1 (3 oz.) package lemon flavored gelatin
  • 4 eggs
  • 1/2 cup milk
  • 1/3 cup cooking oil
  • 1 1/2 cups sifted powdered sugar
  • 1/2 cup orange juice

Instructions

  1. In a large mixing bowl, combine biscuit mix, sugar, and dry lemon-flavored gelatin.
  2. In a small mixing bowl, beat the eggs, milk, and oil until well combined.
  3. Stir the wet ingredients into the dry ingredients until moistened.
  4. Beat vigorously by hand for 1 minute until the batter is smooth.
  5. Pour the batter into a greased and floured 13 x 9 x 2-inch pan.
  6. Bake at 350°F (175°C) for about 25 to 30 minutes or until the cake tests done with a toothpick.
  7. Cool the cake for 5 minutes before serving.
