Ingredients

  • 1 envelope unflavored gelatin
  • 1/3 cup lemon juice
  • 1/3 cup water
  • 1 teaspoon grated lemon peel
  • 5 to 6 drops yellow food coloring
  • 8 oz. cream cheese
  • 1 cup powdered sugar
  • 2 cups whipped cream

Instructions

  1. In a small saucepan, combine gelatin, lemon juice, and water. Let stand for 1 minute.
  2. Stir over medium heat until the gelatin is dissolved.
  3. Stir in grated lemon peel and yellow food coloring.
  4. In a small bowl, combine cream cheese and powdered sugar.
  5. Beat until smooth and fluffy.
  6. Gradually add the gelatin mixture to the cream cheese mixture and blend well.
  7. Refrigerate for about 15 minutes until slightly thickened.
  8. Fold in the whipped cream gently.
  9. Spoon the mixture into a cooked pie shell.
  10. Refrigerate for about 1 hour until set.
  11. Garnish with strawberries before serving.
  12. Store in the refrigerator until ready to serve.
