A light and creamy lemon mousse with bright citrus flavor, perfect for a refreshing dessert that impresses guests or complements a special meal.

Ingredients

  • 1/2 cup milk
  • 1 tablespoon cornstarch
  • 1/8 teaspoon salt
  • 1/2 cup sugar
  • 2 egg yolks
  • 1 teaspoon lemon peel
  • 3 tablespoons lemon juice
  • 1 cup whipping cream

Instructions

  1. Combine milk, cornstarch, salt, and sugar in a saucepan.
  2. Cook, stirring over medium heat, until mixture comes to a full boil and thickens.
  3. Simmer, stirring for one minute.
  4. Break egg yolks into a small bowl.
  5. Gradually stir some hot mixture into the egg yolks, then add all to the saucepan.
  6. Cook and stir for 1 minute longer.
  7. Remove from heat and blend in lemon peel and lemon juice.
  8. Chill until cold to the touch.
  9. Fold in whipped cream.
  10. Pour into 4 stem dessert dishes.
  11. Freeze until firm.
  12. Grate additional lemon peel on top for garnish.
