Ingredients

  • 2 pkg. frozen mashed squash
  • 2 Tbsp. water
  • 2 Tbsp. butter
  • 4 eggs
  • 8 oz. tomato sauce
  • 2 Tbsp. minced onion
  • 1 tsp. salt
  • dash of pepper

Instructions

  1. Cook the frozen mashed squash according to package instructions using only 2 tablespoons water and 2 tablespoons butter.
  2. Beat the eggs until well combined.
  3. Mix the beaten eggs, tomato sauce, minced onion, salt, and pepper together.
  4. Add the egg mixture to the cooked squash and stir well.
  5. Pour the mixture into a greased ring mold.
  6. Place the mold in a pan of hot water.
  7. Bake at 350°F for 1 1/2 hours until set and golden.
