Ingredients

  • red new potatoes
  • 1/4 cup butter
  • 4 to 5 tablespoons olive oil
  • 1 lemon
  • salt

Instructions

  1. Melt butter in a baking dish.
  2. Coat potatoes with lemon juice, olive oil, melted butter, and salt.
  3. Grate lemon zest on top of potatoes.
  4. Bake in a 375°F (190°C) oven for 45 minutes or until browned.
  5. Remove potatoes from baking dish and serve.
