Ingredients

  • 2 (16 oz.) cans artichoke hearts
  • 1 (3 oz.) can black olives, sliced
  • 2 cups bread crumbs
  • 1 1/2 cups oil
  • 1/2 cup Parmesan cheese
  • 3 (16 oz. each) cans sliced potatoes
  • 12 oz. roasted red peppers, cut up
  • 1/2 clove garlic, minced
  • generous dash parsley

Instructions

  1. Mix all ingredients together in a large bowl.
  2. Transfer the mixture to a baking dish.
  3. Bake in a 450°F oven for 30 minutes or until hot and bubbly.
