Ingredients

  • 1/2 lb. angel hair pasta
  • 1/2 c. olive oil
  • 2 cloves garlic
  • 1 medium onion
  • 1/4 c. fresh basil leaves
  • 3 large tomatoes
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • Parmesan cheese

Instructions

  1. Cook the angel hair pasta according to the package instructions, being careful not to overcook.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the chopped onion and minced garlic to the skillet and stir-fry for 1 minute.
  4. Add the peeled and chopped tomatoes, chopped basil, salt, and pepper to the skillet.
  5. Stir and cook the mixture for 2 minutes to let the flavors meld.
  6. Drain the cooked pasta and toss it with the sauce in the skillet.
  7. Serve the pasta sprinkled with Parmesan cheese.
