Ingredients

  • 1 cup sifted cake flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 eggs, separated
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 3 tablespoons warmed milk
  • 1 teaspoon vanilla
  • lemon pie filling

Instructions

  1. Sift the cake flour, baking powder, and salt together.
  2. Beat the egg yolks until thick and lemon colored.
  3. Add sugar and continue beating for several minutes.
  4. Add lemon juice to the egg yolk mixture.
  5. Stir in the sifted flour mixture, warmed milk, and vanilla.
  6. Mix until the batter is smooth.
  7. Beat the egg whites until stiff, but not dry, and fold them carefully into the batter.
  8. Pour the batter onto a greased 11 x 15-inch pan lined with waxed paper.
  9. Bake at 350°F (175°C) for 15 minutes.
  10. Quickly turn the cake upside-down onto a dishtowel sprinkled with confectioners' sugar and remove the paper.
  11. Roll up the cake, folding in the long side, using the towel to keep it rolled.
  12. Let it cool.
  13. Unroll and spread with lemon pie filling or your favorite jelly.
  14. Reroll and sprinkle the top with powdered sugar.
