Lemon Slices offer a tangy, sweet treat with a buttery crumb, perfect for citrus lovers and ideal for sharing at gatherings or enjoying as a refreshing dessert.

Ingredients

  • 1 c. butter, soft
  • 2 c. flour
  • 1/2 c. powdered sugar
  • 5 eggs
  • 2 c. sugar
  • 1/2 tsp. salt
  • 6 Tbsp. strained lemon juice
  • 1 tsp. baking powder

Instructions

  1. Mix slightly beaten eggs, sugar, salt, and lemon juice in a bowl.
  2. Combine baking powder and flour, then add to the egg mixture and mix well.
  3. Spread the batter onto a warm layer as soon as it comes out of the oven.
  4. Bake for an additional 30 minutes.
  5. Allow to cool, then sprinkle with powdered sugar or leave plain.
  6. Cut into bars when completely cooled.
  7. Freeze with wax paper between layers for storage.
