Ingredients

  • 3 cups strawberries
  • 1/2 cup margarine or butter
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups nonfat or low-fat lemon yogurt
  • 2 eggs

Instructions

  1. Turn on waffle iron and preheat.
  2. Use a utility knife to cut the tops off strawberries on a cutting board.
  3. Slice strawberries thinly and place them in a serving bowl.
  4. Place a frying pan on the burner and add margarine or butter.
  5. Melt the margarine or butter slowly over low heat, then turn off the burner.
  6. In a mixing bowl, combine flour, baking powder, baking soda, and salt.
  7. In another bowl, whisk together lemon yogurt and eggs.
  8. Add the wet ingredients to the dry ingredients and stir until just combined.
  9. Lightly grease the waffle iron if necessary.
  10. Pour batter into the waffle iron and cook until golden and crisp.
  11. Serve waffles topped with sliced strawberries.
