Ingredients

  • 3 Tbsp. flour
  • 3 Tbsp. margarine
  • 3/4 c. sugar
  • 3 Tbsp. lemon juice
  • 2 tsp. lemon peel
  • 2 egg yolks
  • 1 c. milk
  • 2 egg whites

Instructions

  1. Combine flour, margarine, sugar, lemon juice, and lemon peel in a bowl.
  2. Add beaten egg yolks to the mixture.
  3. Gradually add milk, a little at a time, stirring continuously.
  4. In a separate bowl, beat egg whites until stiff peaks form.
  5. Gradually add 1/4 cup sugar to the egg whites and continue beating.
  6. Gently fold the beaten egg whites into the lemon mixture.
  7. Pour the mixture into 6 lightly greased custard cups.
  8. Place the cups in a pan of hot water to create a water bath.
  9. Bake at 350°F (175°C) for 35 minutes until the top is cakelike and the pudding is set underneath.
