Bright and fresh lemon vegetables combine tender potatoes, carrots, and zucchini, coated in buttery lemon mixture—perfect as a light side dish for family dinners or casual gatherings.

Ingredients

  • 4 small new potatoes, sliced
  • 2 carrots, cut into thin strips
  • 1 zucchini, sliced
  • 1/3 cup butter or margarine, melted
  • 1 tablespoon grated lemon
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Arrange potatoes and carrots in a vegetable steamer over boiling water.
  2. Cover and steam for 8 minutes.
  3. Add yellow squash and zucchini to the steamer.
  4. Cover and steam for 2 minutes, or until crisp-tender.
  5. Place vegetables in a serving bowl.
  6. Combine melted butter with grated lemon, salt, and pepper.
  7. Pour the lemon butter mixture over the vegetables and toss gently.
