Lemonade Drop Cookies are light, citrus-flavored treats with a tender crumb, perfect for spring gatherings or anytime you crave a sweet, refreshing snack.

Ingredients

  • 1 cup butter
  • 1 cup honey
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon baking soda
  • 6 ounces frozen lemonade

Instructions

  1. In a large mixing bowl, cream the butter.
  2. Continue creaming while slowly adding honey in a fine stream.
  3. Add eggs and beat until light and fluffy.
  4. Sift together flour and baking soda.
  5. Add alternately to the creamed mixture along with 1/3 cup thawed lemonade.
  6. Dough will be soft.
  7. Chill the dough for 1 hour.
  8. Drop dough from a teaspoon onto a greased cookie sheet.
  9. Bake at 400°F (204°C) for 8 minutes or until lightly browned.
  10. Brush hot cookies with remaining lemonade concentrate.
