Ingredients

  • 4 chicken breasts
  • 1 can cream of chicken soup
  • 1 (8 oz.) carton sour cream
  • 1 1/2 Tbsp. fresh lemon juice
  • 1 sleeve Ritz crackers
  • 1 Tbsp. poppy seed
  • 1 stick butter

Instructions

  1. Place cooked and diced chicken in the bottom of an 8 x 11-inch baking dish.
  2. In a bowl, stir together cream of chicken soup, sour cream, and lemon juice.
  3. Pour the soup mixture over the chicken in the baking dish.
  4. Crush Ritz crackers and mix with poppy seed.
  5. Sprinkle the cracker mixture on top of the soup and chicken.
  6. Drizzle melted butter over the cracker topping.
  7. Bake uncovered at 350°F for 25 to 30 minutes until hot and bubbly.
