Ingredients

  • 1 cup dry lentils
  • 4 cups water
  • 2 cups cubed fully cooked ham
  • 3 medium carrots, coarsely chopped
  • 1 medium onion, chopped
  • 1 bay leaf
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dried marjoram, crushed
  • 1/8 teaspoon garlic powder
  • 1 (16 ounce) can tomatoes, cut up

Instructions

  1. Rinse the lentils thoroughly.
  2. Combine the lentils and water in a 4-quart Dutch oven.
  3. Stir in the cubed ham, carrots, onion, bay leaf, pepper, marjoram, and garlic powder into the lentils.
  4. Bring the mixture to a boil, then reduce heat to simmer.
  5. Cover and simmer for about 30 minutes or until the lentils are tender.
  6. Stir in the undrained tomatoes and parsley.
  7. Heat the soup through.
  8. Discard the bay leaf before serving.
