Ingredients

  • 2 c. uncooked lentils
  • 1 c. walnuts
  • 2 eggs
  • 2 large cans evaporated milk
  • 1 c. oil
  • 3 c. cornflakes, crushed
  • 1 tsp. sage
  • 1 onion, diced
  • salt to taste

Instructions

  1. Cook lentils until tender, then drain.
  2. Preheat oven to 350°F (175°C).
  3. Mix cooked lentils, walnuts, eggs, evaporated milk, oil, diced onion, sage, and salt in a large bowl.
  4. Spread crushed cornflakes evenly in a baking dish.
  5. Pour the lentil mixture over the cornflakes and smooth the top.
  6. Bake in the preheated oven for 45 minutes until set and golden.
