Leprechaun Mold

Instructions
- Sprinkle gelatin over water in a medium saucepan.
- Add 1/4 cup of sugar, salt, and egg yolks; stir until thoroughly blended.
- Place over low heat; stir constantly until gelatin dissolves and mixture thickens slightly, about 5 minutes.
- Remove from heat and let cool slightly.
- In a separate bowl, beat egg whites until stiff peaks form.
- Fold whipped egg whites into the gelatin mixture.
- Add green and white creme de menthe; stir gently to combine.
- Pour mixture into a mold and refrigerate until set, at least 4 hours or overnight.
- Unmold and serve topped with whipped cream if desired.
