Ingredients

  • 1 envelope unflavored gelatin
  • 1/2 cup cold water
  • 1/2 cup sugar
  • 1/8 teaspoon salt
  • 3 eggs, separated
  • 1/4 cup green creme de menthe
  • 1/4 cup white creme de menthe
  • 1 cup heavy cream

Instructions

  1. Sprinkle gelatin over water in a medium saucepan.
  2. Add 1/4 cup of sugar, salt, and egg yolks; stir until thoroughly blended.
  3. Place over low heat; stir constantly until gelatin dissolves and mixture thickens slightly, about 5 minutes.
  4. Remove from heat and let cool slightly.
  5. In a separate bowl, beat egg whites until stiff peaks form.
  6. Fold whipped egg whites into the gelatin mixture.
  7. Add green and white creme de menthe; stir gently to combine.
  8. Pour mixture into a mold and refrigerate until set, at least 4 hours or overnight.
  9. Unmold and serve topped with whipped cream if desired.
