- Combine brown sugar, light corn syrup, and 1/4 cup butter in a saucepan and stir over medium-low heat until sugar dissolves.
- Bring the mixture to a boil.
- Pour the caramel mixture into a 9 x 13-inch pan and coat the bottom evenly.
- Arrange 6 slices of bread in a single layer on top of the caramel layer, trimming bread to fit as needed.
- Cover with the remaining bread slices.
- Whisk together the remaining butter, milk, eggs, vanilla, and salt, then pour over the layered bread.
- Cover and chill the assembled dish overnight.
- Bake uncovered at 350°F for 40 minutes or until bread is puffed and light golden brown.
- Let stand for 5 minutes before inverting onto a serving plate.
- Garnish with fruit before serving.
