Light Bread Biscuits

- Mix 1/2 cup warm water and yeast and set aside.
- Mix all ingredients except yeast well, then add the yeast mixture and stir again. Let it sit for about 5 minutes.
- Add the mixture to a large crock of flour, forming a hole in the center. Pour the yeast mixture into the hole and mix well, gradually adding flour until a dough forms.
- Turn the dough onto floured paper and knead for about 5 minutes, adding a little flour as needed.
- Place the dough in a pot with a lid and let it rise for 1 to 1.5 hours.
- Punch down the dough, knead a few times, then divide into 4 equal balls.
- Squeeze each ball into 3 smaller balls, making 12 round biscuits.
- Grease a baking pan and turn each biscuit top in butter or grease, then flip to coat the tops.
- Arrange the biscuits in the pan, let them rise until doubled in size.
- Bake until golden brown, approximately 10 to 12 minutes.
