Light Cornmeal Muffins

Ingredients

  • 1 c. yellow cornmeal
  • 1 c. all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. sugar
  • 1/4 c. egg substitute or 2 egg whites
  • 1 1/4 c. plain nonfat yogurt
  • 1/4 c. vegetable oil

Instructions

  1. Combine cornmeal, flour, baking powder, soda, salt and sugar in a large bowl; make a well in center of mixture.
  2. Combine egg substitute, yogurt and oil; add to dry ingredients, stirring just until moistened.
  3. Spoon mixture into muffin pans coated with vegetable cooking spray, filling three-fourths full.
  4. Bake at 425° for 12 to 14 minutes or until golden brown.
  5. Remove muffins from pans immediately.
  6. Yields 1 1/2 dozen (96 calories per muffin).
