Light Dinner Rolls

- Heat milk, water, and 1/4 cup butter in a saucepan until very warm (120° to 130°).
- Stir together 3 cups of flour, sugar, salt, and yeast in a large mixing bowl.
- Gradually add the warm liquid mixture to the dry ingredients and beat with an electric mixer on high for 2 minutes, scraping the bowl occasionally.
- Add enough remaining flour to make a soft dough.
- Turn out onto a floured board or pastry cloth.
- Cover the dough with a bowl and let rest for 10 minutes.
- Knead just until smooth, about 3 minutes.
- Place the dough in a large greased bowl, turn once to grease the top.
- Cover and let rise in a warm draft-free area until doubled in bulk, about 45 minutes.
- Punch the dough down.
- Shape into rolls as desired.
- Place the rolls on pans.

- Preheat the oven to 350°F.
- Bake for 15 to 20 minutes or until golden brown.
- Remove from pans and place on wire racks.
- Brush with melted butter.
