Light 'N Easy Lasagna
Ingredients
- 1 lb. raw ground turkey ⓘ
- 1/2 tsp. fennel seed, crushed ⓘ
- 1 (30 oz.) jar Ragu chunky garden style spaghetti sauce ⓘ
- 1 1/2 c. water
- 1 (16 oz.) 1% low-fat cottage cheese ⓘ
- 2 eggs ⓘ
- 1/4 c. chopped fresh parsley ⓘ
- 9 lasagna noodles (uncooked) ⓘ
- 1/3 c. grated Parmesan cheese ⓘ
- 1 1/2 c. shredded part skim Mozzarella cheese (6 oz.) ⓘ
Instructions
- Brown ground turkey and fennel seed in a large saucepan. Drain well and crumble.
- Stir in spaghetti sauce and water. Simmer, covered, until heated.
- Combine cottage cheese and eggs in container of electric blender.
- Process until smooth.
- Stir in parsley.
